Christmas Mallee
Our Christmas Malee honey is sourced from a mallee eucalypt tree (Eucalyptus socialis) and is found growing in many parts of Australia. This honey is produced in regional Victoria over the Christmas period, hence the name.

Flavour and texture:
A mild honey which is not overly sweet with notes of butterscotch and eucalyptus.

Tip: Has your honey crystalised or started to become too thick ? If so, this is totally normal, natural and a characteristic of raw honey. Crystalised honey is just as edible and tasty as liquid honey. However, if you do not enjoy the texture, you can soften the honey by placing the jar in warm water. After a few minutes and a stir, the honey should return to its liquid state.
